Fudge Brownie Cake:

In this lightened-up version of sense chocolate cake, traditional butter and sugar are replaced by coconut oil and coconut sugar with no detraction to the wonderfully rich and fudgy texture. Cut into wedges and eat them with your hands like a brownie, or serve plated with a scoop of froze yogurt alongside.

Instructions:Ingredients:
Grease a 7-inch springform pan with nonstick cooking sprayNonstick cooking spray
In a small bowl, whisk together the flour, cocoa powder, baking powder, and salt.1 cup (115 g) all-purpose flour
In a medium bowl, whisk together the eggs, sugar, melted coconut oil, vanilla, and espresso.1/4 cup (20 g) unsweetened cocoa powder
Gently whisk the dry mixture into the we mixture. 1 teaspoon baking powder
Fold in the chocolate chips. 1/4 teaspoon kosher salt
Pour the mixture into the prepared pan and cover with aluminum foil.2 large eggs, at room temperature
Pour the water in the Instant Pot and place the springform pan on the steam rack.1 cup (190 g) coconut sugar
Using the handles, lower the pan into the pot.5 tablespoons (75 ml) coconut oil, melted
Lock the lid in place and turn the valve to Sealing. Press the Pressure Cook button and set the cook time for 35 minutes at high pressure.1/2 teaspoon vanilla
Let the steam release naturally for 15 minutes, then turn the valve to Venting to quick-release any residual steam.1 espresso (or 2 Tbsp boiling water mixed with 1 Tbsp espresso powder), cooled
Carefully remove the lid and, using the steam rack handles, lift out the pan. Transfer to a cooling rack, remove the foil, and let cool completely.8 oz (225 g) regular or mini semisweet chocolate chips
To serve, remove the pan sides and cut the cake into wedges. 2 cups (475 ml) water
